Old Home Week 2010 is here and gone, and summer is beginning to fade, but the weather remains terrific. This gives you time to show off your "I survived Old Home Week 2010" t-shirt if you were lucky enough to get one, as apparently they sold like hot cakes, selling out on the first day.

Speaking of Old Home Week, didn't the organizing committee do a great job!? They are to be commended for all the long hours, planning, and dedication they, and all volunteers put forth to make OHW 2010 the success it was. We, the members of the Tabusintac L.S.D. wish to extend our congratulations and thanks to the organizing committee for a great week. It's amazing to see our quiet community come to life, and reach the excitement level it does during this time. Ask anyone who attends, and they'll tell you it's the one week of their life they plan five years in advance. Few, if any festivals can claim that. For this, and countless other reasons, we should be proud of the work that was accomplished during this week. Tabusintac was once again put on the map, because of you, your hard work, and the hospitality of all residents. Thank you!

Lastly, the start of the 2010 - 2011 school year is not far off, and with that said, we would like to wish all our students returning this fall, a safe and productive semester.

TABUSINTAC HOME & SCHOOL
We are still actively fundraising for the playground for the Tabusintac Rural School, which is being installed on August 20th, 21st and 22nd. Anyone wishing to volunteer can show up at the school on any or all of the above mentioned days. The project will be commencing each morning at 8:00 a.m. and a number of volunteers are needed to help keep the cost to a minimum.

Recipe of the Month

Zucchini Pie
Ingredients
• 4 cups zucchini - peeled, seeded and sliced
• 1 1/4 cups white sugar
• 2 tablespoons all-purpose flour
• 1 1/2 teaspoons ground cinnamon
• 1 1/2 tablespoons cream of tartar
• 2 tablespoons lemon juice
• 1/8 teaspoon salt
• 1/4 teaspoon ground nutmeg
• 1 tablespoon butter, diced
• 1 recipe pastry for a 9 inch double crust pie
Directions
1. Boil zucchini until tender. Drain and let stand in cold water for about 5 minutes, then drain.
2. Add sugar, flour, cinnamon, cream of tartar, lemon juice, salt, and nutmeg. Mix well. Put into the pie crust. Dot with butter. Put top crust on.
3. Bake at 400 degrees F (205 degrees C) for 40 to 50 minutes.

Summer is winding down, and the back to school season is well underway; our main focus as of now is our project:
"Educating the Stakeholders of the Tabusintac Watershed on the Importance of Water Quality"
Did you know?
> That land surrounding the headwaters and mid-section of the Tabusintac Watershed are being used more each year for the harvesting of blueberries? This increases the potential risks of water pollution which could further lead to contaminated well water.
> Purple Loosestrife, an invasive species that limits the growth of Natural Vegetation and trees, is growing in more areas of the Tabusintac Watershed each year.
> To date, the Tabusintac Watershed Association has discovered 2 important species of Fresh Water Mussels.
> An endangered species of fish- Atlantic Wolffish (Anarhichas lupus) - were observed frequently in the early spring by lobster fishermen. These fish have prominent canine teeth, and can reach 1.5 m in length. Wolffish are typically gentle by nature, but are frequently killed as they are viewed as violent- only because they defend themselves outside of their natural habitat. They live in underwater caves, and are a key predator for maintaining the populations of the sea urchin and the green crab.
Community Aquatic Monitoring Program will be August 24th. If anyone would like to participate; please contact the office. There are 6 different sites to sample; therefore, if you can make it to one of the sites, sampling normally takes place from 9:00 am until 1:00 pm.

Tabusintac Chalets are now moving into their 5th year of operations. You may recall that at Old Home Week 2005 there was a cottage set up at the community hall. No one said it would be easy and there were times that it became very difficult indeed to keep the project on track, but here we are 5 years later. One of the biggest obstacles was to satisfy PNB Department of Health requirements. This grossly expanded the budget and the sewage system that is in place is likely better than the Village of Neguac's.

We encourage all visitors to drive through the site and have a closer look. Of course the individual cottages have been booked out solid for OHW, virtually since the inception at OHW 2005. We are looking at selling several cottage lots at the east side of Riverside Drive for some limited further development. We also have some larger lots, ideal for a more permanent retirement home although all the present chalets are perfectly liveable year-round. There may be a limited number of the present shareholders willing to sell their interest in their respective original cottage. If you are interested in booking a fully furnished cottage for any time in the future or perhaps in owning your own piece of real estate on the Tabusintac River, call the office at 779-8222 or just drop in. In the summer we share office space with the golf course so maybe you can play a round while you are there!

TCDCI "Tabusintac Community Development Corporation Inc" is looking for seniors in the community who would like to volunteer some of their time at the "Lighthouse /Interpretation Center" this summer.

This would be an opportunity to pass on your knowledge and memories of the Tabusintac River to visitors

The Tabusintac Interpretation Center "lighthouse" is now open to all visitors between 09.30 and 1800 hrs from Wednesday to Sunday during the summer season. The official opening will be on the 2 August at 1600 hrs. Everyone is welcome to attend.


The Center will offer the following:

1. "A $2 fee will allow you to climb to the top and get a great view of the river, with some awesome photos opportunity.

2. View a PowerPoint presentation on the smart board, of various activities on the river starting in the early 1900.

3. Free Tourist information pamphlet and map of the Acadian Peninsula are also available.

4. You can purchase souvenir T-shirt for $14.00 and $12.00, mug for $9.00, and key chain for $ 3.00 at the desk.

REWARD
A reward is offered for the location and identification of the large boulder that once stood for untold years at Kirbi's Point, Tabusintac.It was from this rock that all original land grants on our river had its starting point. This rock was also the site in the 1700th century when a war party of Mohawks met a party of Micmac at Tabusintac Bay; According to custom the Chiefs fought in single combat with the Micmac Chief winning taking the Mohawk Chief to the boulder and cleft his skull with his Tomahawk.
A picture of the boulder we would like to identify as recorded by W. F. Ganong in 1906 can be seen and information can be left at the Tabusintac Interpretation Centre at 779-9280.




Tabusintac Country Market
The Tabusintac Country Market is back to its home at the Tabusintac Community Hall after spending two weeks under the big tent for Old Home Week 2010.
We had a great time being a part of Old Home Week. Our vendors enjoyed meeting with family and friends, presenting and selling their wares to everyone.
So now that we're back, please join us each Saturday for breakfast and a visit with the vendors.
A decision will be made soon on how long the market will remain open as we get into the fall months.

Tabusintac Library & Museum
The library and museum was a busy spot in the days leading up to and during Tabusintac Old Home Week 2010.
We were pleased to host the Common Thread Quilting Group and their colourful display of quilts for the first three days of old home week. The library looked beautiful with all the quilts hanging from the racks, the book shelves and any other available space. Even our new, white picket fence was used. It was as if those quilts were meant to be there.
Thanks to the quilting group for the extra help they provided to our summer student during the busy times.
We also played host to a special guest, Sally Armstrong, the author of the best selling book "The Nine Lives of Charlotte Taylor: First Woman Settler on the Miramichi."
She did three readings and book signings during the week and all were well attended. Many people were pleased to meet Sally and have her answer their questions about Charlotte and the book.

Thank you also to anyone who took a turn working at the library during the week and giving our summer student time the opportunity to enjoy a bit of the Old Home Week festivities.
And last, but not least, a big thank you to our summer student, Ashley Boudreau. She worked hard this summer getting things in tiptop shape and looking great for old home week. Many of you seen her painting panel after panel (there were 19) and posts for the new fence and commented what a hard worker she was.
A job well done Ashley!

Tips and Tricks to Optimise the Shelf Lives of Fresh Products:
Apples should always be kept cold. They emit a high amount of a gas called ethylene, which accelerates decomposition of other produce, so should always be kept separate from other fresh produce
Asparagus should be stored in the refrigerator, with the stems standing in a small amount of water to preserve freshness
Broccoli can be plunged into very cold water to revive it if it becomes wilted, crispening it up ready for consumption
Honeydew and Cantaloupe melons should be stored separately, as they react and rot more quickly if stored together
Cucumber should be kept very cool, as it is quick to soften and over-ripen if in a warmer temperature
Green beans should be kept at 10 degrees, and consumed within two days for optimum freshness
Grapes should never be washed when storing, as their natural bloom protects against ripening
Bananas act as an accelerant on other fruit and vegetables, causing them to ripen too quickly, keep them out of the refrigerator and preferably hung in a cool place
Oranges should be kept separated from other porous foods such as eggs and cheese, as their odour is easily absorbed
Leave stalks on foods such as strawberries and tomatoes, to lengthen their shelf life
The refrigerator door is the coldest place in the fridge, so is ideal to keep perishables such as milk at optimum temperature.
