February - March 2010

Local Service District

Here we are already in the middle of February, and Old Man Winter is still treating us relatively well. This coming weekend the family tournament will be taking place at
the Neguac arena, good luck to our teams who are participating in this event. The Recreation Council will be hosting the Winter Carnival from February 23 to the 27, so I
encourage everyone to come and have some Winter Fun.

Recipe of the Month Macaroni Cheese & Spinach

2 tablespoons olive oil
1/2 cup chopped onion
8 ounces fresh mushrooms, sliced
1 teaspoon minced garlic
1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
8 tablespoons butter, divided
5 tablespoons all-purpose flour
3 cups milk
3 cups shredded mozzarella cheese
1 1/4 cups grated Parmesan cheese, divided
1 1/2 teaspoons salt
1 (16-ounce) package elbow macaroni, cooked according to package instructions
1 cup fresh bread crumbs

Directions
1. Preheat oven to 350 degrees. Lightly grease a 13-x-9-x-2-inch baking dish; set aside.
2. In a large skillet, heat olive oil over medium-low heat. Add onion and cook, stirring occasionally, for 3 to 5 minutes, or until tender. Add mushrooms and garlic. Cook for 2 minutes, or until mushrooms are tender. Add spinach and cook until heated thoroughly. Remove from heat and set aside.
3. In a large saucepan, melt 5 tablespoons butter over medium heat. Sprinkle flour over melted butter. Cook, stirring constantly, for 3 minutes.
4. Gradually add milk, whisking to combine. Cook over medium heat, whisking constantly, for approximately 15 minutes, or until mixture is thickened. Remove from heat. Add mozzarella, 1 cup Parmesan, and salt, stirring until melted.
5. Spoon macaroni into a large bowl. Pour cheese mixture over macaroni. Add spinach mixture; stir. Spoon into prepared baking dish.
6. Bake for 20 minutes.
7. Meanwhile, in a small bowl, combine fresh bread crumbs, remaining 3 tablespoons melted butter, and remaining 1/4 cup Parmesan cheese. Remove macaroni from oven and sprinkle with bread-crumb mixture. Return to oven and bake for 5 minutes, or until top is lightly browned.

Jokes of the Month

1. If all is not lost, where is it?
2. Cats have over one hundred vocal sounds. Dogs only have about 10.
3. The only time the world beats a path to your door is if you're in the bathroom.
4. It's not hard to meet expenses...they're everywhere.

Another month has passed and we as legionnaires have been hard at work. Our Fund Raising Committee is working extra hard to get funds for our renovations.
Our legion will have new washrooms put in which will be wheelchair accessible and also there will be work done for a new veterans lounge upstairs. We are trying to raise the sum of 20,000.00 from community support as well as fundraisers. We have also asked for some support from the Government.
A plaque will be placed in recognition of donations from any person who donates the sum of 100.00. This plaque will be put on a brick wall in the legion. Also, any business or person who donates 250.00 or over will get a donor's plaque placed. Anyone interested please call a member of our building committee, Ray 779-4628, Sheila 779-4430, Judy 779-8141, Wilma 779-8124, Malcolm 600-0117
