www.tabusintac.org/watershed The TWA is starting this year's project "Inventory of Freshwater Mussels in the
Tabusintac Watershed." Freshwater mussels are used as bio-indicators for the surrounding environment; for example, part
of a mussel's life cycle is literally attached to a specific species of host fish. If a fish, like the salmon or gaspereau,
cannot thrive in an area; the chances of finding specific species of young freshwater mussels are very slim.
We are
inviting an expertise in this field to help us identify the specific species of freshwater mussels found here in our watershed.
We will be doing a workshop on the proper procedures of identifying and counting numbers of freshwater mussels that inhabitat
the Tabusintac watershed. It is hard to set a specific date because we need sunny weather to properly see the freshwater mussels
in their environment- but we are considering the following dates June 23 to June 26. Any one wishing to participate and to
confirm date of workshop or would like more information on this project; please don't hesitate to contact TWA.

Recipe of the Month
Salmon with mustard dill sauce
Prep and Cook Time: 15 minutes
Ingredients:
• 1½ lbs salmon filet cut into 4 pieces, skin and
bones removed
• 1 TBS fresh lemon juice
• Dill Sauce
• 2 medium garlic cloves, pressed
• 1 TBS Dijon mustard
• 2 TBS fresh lemon juice
• ¼ cup chicken broth
• 1 tsp
honey
• 1 tsp chopped fresh dill
• salt and white pepper to taste
Directions:
1.Preheat
broiler on high and place an all stainless steel skillet (be sure the handle is also stainless steel) or cast iron pan under
the heat for about 10 minutes to get it very hot. The pan should be 5 to 7 inches from the heat source.
2.Press garlic
and let it sit for at least 5 minutes to bring out its health-promoting properties.
3.Prepare the rest of the ingredients
for the sauce.
4.Rub salmon with 1 TBS fresh lemon juice, salt and pepper. (You can Quick Broil with the skin on; it
just takes a minute or two longer. The skin will peel right off after cooking.)
5.Using a hot pad, pull pan away from
heat and place salmon on hot pan. Return to broiler. Keep in mind that it is cooking rapidly on both sides so it will be done
very quickly, usually in about 7 minutes (7 minutes per inch of thickness). Test with a fork for doneness. It will flake easily
when it is cooked. Salmon is best when it is still pink inside.
6.Add garlic to a stainless steel skillet and stir for
half a minute. Add mustard, and whisk in 2 TBS lemon juice, broth, honey, salt and pepper. Cook on high heat for a minute
to reduce slightly and add dill. Pour over salmon and serve. Serves 4 Serving
Handy Hints Tick removal ...........
Recipe and hints submitted by Colin Harding
Summer is here and the ticks will out.. Here is a good way to get them off
you, your children, or your pets. Give it a try.
This is great, because it works in those places where it's some
times difficult to get to with tweezers: between toes, in the middle of a head full of dark hair, etc.
Apply a glob
of liquid soap to a cotton ball. Cover the tick with the soap-soaked cotton ball and swab it for a few seconds (15-20), the
tick will come out on its own and be stuck to the cotton ball when you lift it away. This technique has worked every time
I've used it (and that was frequently), and it's much less traumatic for the patient and easier for me.
Jokes
What vegetable can tie your stomach in knots?.....String beans .
What
did the carrot say to the wheat?...........Lettuce rest, I'm feeling beet.

There is less than two weeks left to register for the ball tournament to be held

only playing two games. Many volunteers are needed for this event for the canteen and
to ump games as well. Eight to
12 teams will be needed to make it a great success and each team will pay a fee of $100 to enter. The deadline to enter is
June 23rd with receipt of money by
June 30th. We encourage local businesses, teachers, churches, families, etc. to put
a team in.
