Recipe
of the Month
Roasted Red Potatoes with Bacon & Cheese
Prep: 15 min. Total: 1 hour & 10 min.
Ingredients
½ cup ranch dressing
½ cup shredded mozzarella cheese
¼ cup real bacon bits
2 lbs small red potatoes, quartered
1 tbsp. chopped fresh parsley
Instructions
Preheat over to 350˚F.
Mix dressing, cheese, and bacon bits in large
bowl.
Add potatoes and toss lightly.
Spoon into light greased 13×9" baking dish
and cover with foil.
Bake 40 min. Remove foil and bake additional
15 min.
Sprinkle with parsley.
Makes
eight 2/3 cup servings.
Substitute
Use chopped fresh rosemary in place of the
parsley.

in the back yard. Watching the men cut, split, and pile it.

splitting on the frosty air.
Clean smell of
new wood.
Watching cows
being milked. Smells in the barn: heat from the animals mixed with the scent
of hay and manure.
Sitting in the
middle of a blueberry patch eating lunch. Bees and horseflies buzzing around. The hot sun. Cooling off with a dip in
the river.
Picnics on the
lawn, in the summer, under the shade of the trees. Ice cold Kool-Aid, and home
made cookies.
Lining up outside
the school after the bell rang, the smallest to the oldest. The teacher saying
“Forward. March.” The
big boys mimicking the teacher as soon as her back was turned.
Singing “God
Save the Queen and “O Canada” every morning in school.
The screech of
chalk on the blackboard.
Writing hundreds
of lines whenever we misbehaved. “I will not…”
Smell of green
powdered floor cleaner in school.
Arbor Day at school. Planting trees and school yard cleanup.

RECREATION COUNCIL
We would like to extend thanks to all who
volunteered over carnival and to all who came out and showed their support. We
had a great turnout and good times were had by all young and old. A very special
thanks to Dale Harding for looking after the rink this year and to those who helped him out.
It certainly proved to be quite the task with all the snowfall. Without
the rink carnival would not have been possible. Our annual meeting will be
held at the Tabusintac Community Hall on April 28th @ 7:00.

Community Center Inc.
At the annual meeting of the Tabusintac Community
Center Inc. four community residents were elected as directors. TCCI welcomes Bill Vye, Amanda Simpson, JD Kennedy, and
Jim Stymiest to the committee.
Fraser McCallum and Gail Savoy were also re-elected
as directors.
At a directors’ meeting held after the
annual meeting, directors elected the following to serve on the executive:
Chairman - Fraser McCallum
Vice-chairman - Jody Holmes
Secretary - Gail Savoy
Treasurer - Tanya McEachern
TCCI will continue its work to obtain the
remaining amount of monies needed to build the community center part of the school/community center facility.
To date our contributions have included funds
to expand the size of the gymnasium and allow for a separate cafeteria in the school. In the early planning stages, the government
offered a cafetorium which is a multi-purpose room. It was suggested this would meet the needs of the school and community.
But we persevered and prevailed in our argument to have these two areas separate from each other and it will be a benefit
to everyone.
TCCI also purchased additional property to
assist with the project.
This facility will not only serve the educational
needs of our children, it will also serve the community in many aspects. It is a win/win situation for all
of us. Your continued support in this project is very much appreciated.
